Everyone’s favourite, chole added to the nutritious gravy of the winter sensation, Sarson and served with a dollop of butter.

SARSON CHOLE KA SAAG

Ingredients

1 large bunch of sarson leaves
1½ boiled chickpeas (chole)
3-4 tbsps ghee
1 tbsp finely chopped ginger
1 tbsp finely chopped garlic
1 medium onion, finely chopped
2-3 green chillies, chopped
20-25 spinach leaves
Salt to taste
½ tsp garam masala powder
White butter cubes for garnish

Method

1. Heat ghee in a non-stick deep pan. Add ginger and garlic and sauté for 1 minute. Add onion and mix well. Cook till translucent.
2. Add green chillies and mix well. Add the sarson leaves and mix. Cook till the leaves wilt.
3. Add spinach leaves and mix. Cook for 1 minute.
4. Stir in 1½ cups water and sprinkle salt and mix well. Cover and cook for 5-6 minutes.
5. Switch the heat off and blend the mixture till smooth using an electric hand blender.
6. Switch the heat on, add boiled chickpeas and mix well. Cook for 1-2 minutes.
7. Add garam masala powder and adjust salt and mix well. Cook for 1 minute.
8. Transfer it in a serving bowl, garnish with white butter cubes and serve hot.
