Ingredients:
For the Kunafa:

250g (about 9 oz) kunafa (shredded phyllo pastry)
150g (about 5 oz) unsalted butter, melted
For the Filling:

500g (about 1 lb) ricotta cheese or sweetened cream cheese
1/2 cup sugar (adjust to taste)
1 teaspoon vanilla extract
1/2 cup chopped nuts (optional, like pistachios or walnuts)
For the Syrup:

1 cup sugar
1/2 cup water
1 tablespoon lemon juice
1 teaspoon rose water or orange blossom water (optional)
Instructions:
Prepare the Syrup:

In a small saucepan, combine sugar, water, and lemon juice. Bring to a boil, then reduce heat and let it simmer for about 10 minutes until slightly thickened. Remove from heat and stir in rose water or orange blossom water, if using. Set aside to cool.
Preheat the Oven:

Preheat your oven to 180°C (350°F).
Prepare the Kunafa:

In a large bowl, gently separate the kunafa strands. Pour the melted butter over the strands and mix well until fully coated.
Assemble the Kunafa:

Grease a round baking dish (about 9-10 inches). Spread half of the buttered kunafa evenly in the bottom of the dish, pressing it down gently.
In another bowl, mix the ricotta (or cream cheese), sugar, vanilla extract, and chopped nuts (if using). Spread this filling over the kunafa layer.
Top with the remaining kunafa, spreading it evenly and pressing it down gently.
Bake:

Bake in the preheated oven for about 30-40 minutes or until the top is golden brown and crispy.
Add Syrup:

Once baked, remove the kunafa from the oven and immediately pour the cooled syrup over the hot pastry. Allow it to soak for a few minutes.
