Step 3: Make the Bourguignon
Add the sliced mushrooms to the pot with the onions and garlic. Pour in the red wine and beef broth, then stir in the tomato paste and flour until well combined. Add the bay leaf and fresh thyme sprigs. Bring the mixture to a simmer and cook for 20-25 minutes, until the sauce has thickened.

Step 4: Finish the Bourguignon

Step 5: Prepare the Mashed Potatoes

Drain the potatoes and return them to the pot. Mash the potatoes with a potato masher or ricer. Stir in the heavy cream, butter, and season with salt and pepper.

Step 6: Cook the Green Beans
Bring a large pot of salted water to a boil. Add the trimmed green beans and cook for 5-7 minutes, until tender-crisp. Drain the green beans and toss with the minced garlic and a drizzle of olive oil.
