Plant-Based Macaroni Recipe (Serves 4)

Ingredients:
• Macaroni: 700 g (1 pack)
• Soy protein: 3 cups
• Carrots: 2 medium, diced
• Onion: 1, diced
• Bell pepper: 1, diced
• Salt: to taste
• Turmeric: 1 tsp
• Black pepper: to taste
• Tomato paste: 3 tbsp
• 1 potato, sliced
• Oil: as needed

Instructions:
1. Dice the onion, carrot, and bell pepper. Sauté them in oil until slightly soft.
2. Add turmeric and black pepper, and sauté briefly.
3. Add tomato paste and cook for 20 minutes until the carrots are tender.
4. Add the soy protein and mix well with the vegetables.
5. Slice a potato into thin rounds and place them at the bottom of a pot. Drizzle with a little oil.
6. Boil the macaroni in water for 8–10 minutes, then drain.
7. Layer the macaroni and vegetable sauce alternately in the pot.
8. Cover and simmer for 20 minutes to allow the flavors to blend.
