Similar to locally well-known dish like Chicken Tinola, Chicken Binakol is an iconic Iloilo chicken recipe simmered in coconut meat and water. The similarity is mainly the presence of ginger among the ingredients, but it is sweeter because the broth is made with coconut juice.

There are two types of this dish: the Batangas version; in which the locals usually use a savory and lean Philippine native chicken meat and cooked slowly for long period in a bamboo tube, and the Visayan version; wherein it is prepared with lemongrass and simmered in a coconut shell.

TRIVIA: Palayok’s porous nature allows both moisture and heat to circulate through the food, which results in slow yet aromatic food. It also retains the nutrition of the food, which is generally lost in other types of utensils.

INGREDIENTS

▪️ 1 kg chicken
▪️ 1 stalk lemon grass
▪️ 1/2 piece papaya
▪️ 4 cups coconut juice
▪️ 1 teaspoon whole peppercorn
▪️ 1 cup coconut meat
▪️ 1 bunch kangkong
▪️ Patis to taste
