How To Cure & Season A Molcajete | How To Prep A Mexican Mortar & Pestle

I've been wanting a molcajete for a really long time now. A Molcajete is essentially an amazing Mexican version of a mortar and pestle made from porous volcanic rock that is perfect for mashing avocados to make guacamole or super flavorful salsas.

We actually made the leap and ordered one from Amazon not too long ago and when we took it out of the box, we realized it looked a lot different from what we were used to seeing at Mexican restaurants. Due to its porous composition, a new molcajete needs to be cured before it is used to prepare foods otherwise sediments trapped in the crevices or that can break off can end up in the food you are trying to prepare.

Upon my research, I found that there are 2 processes to preparing a new molcajete.

The first process is to cure a molcajete which involves repeatedly grinding uncooked rice into the mortar and pestle. There are 2 steps to the curing process. The first step involves grinding dry uncooked rice until it becomes a powder at least 3 times. The second step involves grinding soaked uncooked rice until it becomes a paste at least 3 times.

The second process is to season a molcajete which will help infuse extra flavor into the molcajete and give any food being prepared in it an extra flare. This step is completely optional and looks like it is a newer practice.
