• Sausage Casserole Recipe
Heat 2 tbsp olive oil and cook a finely chopped onion until translucent. Take your favourite sausages, allowing about 1.5 per person (we used Cumberland, but you could also use veggie sausages too), remove skins, divide into 4 and roll into balls. Add to the pan with the onions and brown gently. Add the garlic and cook for one minute. Add 3 small-medium carrots, chopped, stir and cook for another minute. Add 2 tbsp plain flour and stir to coat everything. Add 600ml stock (I used 2 beef stock cubes and 1 veg) and stir well. Add a splash of red wine vinegar, 1tsp basil, 1 tsp parsley, half a tsp of herbs de Provence, one salt and pepper. Bring to a simmer, cover and cook over a really low heat for 25-30 minutes, stirring ocassionally. Add a 400g tin of butter beans (drained) and cook for a further 10 minutes with the lid off. If you want to thicken the sauce mix in some cornflour mixed with water (I added 2tbsp cornflour mixed with 2tbsp water). Serve with fluffy potatoes!

• Apple Crumble Recipe
Peel and chop roughly 700g (prepared weight) of apples (any kind! I used a mixture of apples from local trees & from my step mum's garden). Add to a pan with 4-5 tbsp water, 2tbsp caster sugar (preferably golden but normal works fine), the juice of half a lemon (I just used bottled lemon juice) and 1tsp cinnamon. Cover and simmer gently for about 10 minutes until the apple is beginning to soften. Meanwhile, whizz up 125g cold salted butter, 200g plain flour and 125g light brown soft sugar (light muscovado also works well) in a food processor until you have the consistency of crumbs. Lay out your crumble mixture on a baking tray and bake for about 10 minutes until it's just starting to colour but still pale.
Butter your dish, add the apple mixture and sprinkle the crumble on top (don't press down). Bake at 170c (190c fan) for 30-40 minutes until crumble is golden and the juices are bubbling. Let it cool for 5-10 minutes before eating as the apple gets really hot. Serve with custard or ice cream!
