Mamaks are Tamil Muslims who migrated from South India to various parts of South East Asia many centuries ago. Mamak Mee Goreng is a popular dish in both Malaysia and Singapore.

Anne does this noodles the vegetarian way and adds her homemade Kuah Kacang to it. This is optional, but highly recommended as it gives the noodles a special nutty flavour on top of the slightly sweet and sour notes from the tomato ketchup.

Ingredients:
Serves 6

Yellow noodles 500g
Round cabbage 300g (sliced)
Choy sum 150g (cut into pieces)

Eggs 4 (scramble with 1/4 tsp salt and 1/4 tsp chilli powder)
Tau Kwa 2 pcs (shallow fried, cut into small pieces)

Tomato 1 (sliced)
Garlic 3 cloves (chopped)
Big Onion 2 (sliced)
Chilli paste 2 tbsp

Kuah Kacang 3 tbsp (optional, see below for video link)
Tomato ketchup 3 tbsp
Black Soy Sauce 1 tbsp
Light Soy Sauce 1 tbsp

Salt & Sugar to taste

Red Chilli 1, Green Chilli 1 (sliced, for garnish)
