This Sprouted Curry Has More Protein Than Chicken | Molake Hurali Kalu Saaru
Molake Hurali Kalu Saaru is a traditional Karnataka-style curry made with sprouted horse gram (Hurali Kalu). It's super healthy, packed with protein, and has a deep, earthy flavour.
Ingredients:
500 g sprouted horse gram
3 large onions
A handful of coriander leaves
2-inch piece of ginger
1 whole garlic
2-inch cinnamon stick
8-10 cloves
1/2 cup dry coconut powder or fresh coconut
1/4 cup curry powder or sambar powder
1/2 teaspoon turmeric powder
1 large tomato
Water - as required
2 tablespoons oil
2 tablespoons salt, or to taste
2 large potatoes
200 g eggplant
Method:
Add 3 large onions, a handful of coriander leaves, ginger, garlic, cinnamon stick, cloves, coconut, curry powder or sambar powder, turmeric powder, and tomato in a blender.
Add a little water and blend everything into a smooth paste.
Heat 2 tablespoons of oil in a pressure cooker.
Add the sprouted horse gram and sauté for 2 minutes.
Add the prepared masala paste and cook for about 5 minutes or until the raw smell goes away.
Stir in the salt and chopped potatoes. Mix well.
Add water as needed and bring it to a boil.
Add the chopped eggplant and mix everything well.
Close the lid and pressure cook for 2-3 whistles.
Turn off the heat and allow the pressure to release naturally.
Once the pressure drops, open the lid, stir gently, and serve hot with ragi mudde and rice.
