Ingredients
2 cup all-purpose flour
salt to taste
3 tbsp oil
1 tsp baking powder
2/3 cup warm water
1 onion
1 green chilli
1/2 cup red bell pepper
1/2 cup green bell pepper
1/2 cup sweet corn
1/4 cup paneer
2/3 cup cheese
1/2 tsp black pepper powder
2 tsp mixed herbs
1/2 cup salsa
2 tbsp butter


Method
Tortilla:
o In a bowl, take all-purpose flour.
o Add salt, oil, and baking powder.
o Mix everything well.
o Gradually add water and knead the mixture into a soft dough.
o Let it rest for 20-25 minutes.
o Divide the dough into equal portions and roll each into a round shape like a chapatti.
o Heat a tawa and lightly cook the tortillas on both sides until cooked but not too crisp.
Quesadilla Stuffing:
o Heat oil in a pan.
o Add finely chopped onions and cook lightly.
o Add green chilli, red bell pepper, green bell pepper, and sweet corn.
o Season with salt, black pepper, and mixed herbs (like oregano or Italian seasoning).
o Stir and saute for a minutes. Do not overcook keep the veggies crunchy.
o Toss in crumbled paneer and some shredded cheese.
o Mix well and saute for another minute until the cheese starts to melt.
o Remove from heat.
Assemble the Quesadilla:
o Place one tortilla on the hot tawa.
o Spread a generous amount of cheese on one half of the tortilla.
o Spread the prepared veggie and paneer stuffing over the cheese.
o Add a spoonful of salsa on top of the stuffing.
o Add more cheese on top for extra gooeyness.
o Fold the tortilla in half to cover the stuffing.
o Spread a little oil or butter on top.
o Flip the quesadilla and cook both sides until golden and crispy.
o The cheese should be fully melted, and the tortilla should be crisp.
o Once cooked, remove from the tawa and cut.
o Serve hot with your favourite dip on the side.
