While foraging mid-October in southwestern Ontario, all of these hen-of-the-wood mushrooms and lots more were found. Several hundreds of pounds all together (although we only harvested a fraction) (also the big hen was realistically around 40 lbs). Scientifically known as Grifola Frondosa, they are great to eat as a vegetarian meat alternative full of beneficial compounds. AKA King of Mushrooms, I suspect this "Hen-of-the-Woods" ripening right around Thanksgiving has something to do with the origins of Thanksgiving. This would have been a celebrated source of food for our hunter and gatherer ancestors all around the world for all human history. Treasure of nature!
