Ingredients:
Fajita Seasoning:
• 1 TBS chili powder
• 1 tsp smoked paprika
• 1 tsp onion powder
• 1 tsp garlic powder
• 1 tsp ground cumin
• 1 tsp salt
• 1 tsp sugar
• ½ tsp ground pepper
• ½ tsp cayenne pepper
• ½ tsp oregano
• ½ tsp crushed red pepper flakes
Avocado Cream Sauce:
• 1 avocado
• ½ cup sour cream
• ¼ cup cilantro leaves
• 1 TBS lime juice
• 2 cloves garlic
Beer Batter:
• 1¾ cups all-purpose flour (divided)
• 2 TBS cornstarch
• ¼ tsp baking soda
• ¼ tsp baking powder
• ¾ cup beer
Fish:
• 1 lb skinless whitefish fillets
• Flour tortillas
• 3 cups vegetable oil (for frying)
Instructions:
1. Prepare Fajita Seasoning: Mix all seasoning ingredients together in a bowl.
2. Marinate the Fish: Rub the seasoning generously on both sides of the fish. Cover and refrigerate for at least 3 hours.
3. Make the Beer Batter: In a large bowl, whisk together ¾ cup flour, cornstarch, baking soda, baking powder, and beer until smooth. Cover and let rest in the refrigerator for at least 3 hours.
4. Blend Avocado Sauce: In a food processor, blend avocado, sour cream, cilantro, lime juice, and garlic until smooth. Cover and refrigerate until serving.
5. Prepare Fish: After marinating, cut fish into strips.
6. Heat Oil: In a deep pan, heat vegetable oil to 350-375°F over medium heat.
7. Fry the Fish: Dredge each fish strip in 1 cup of dry flour, then dip into the beer batter. Carefully place in hot oil and fry for 6-8 minutes on each side until golden brown. Drain on paper towels.
8. Assemble Tacos: Warm tortillas and fill each with fried fish and avocado sauce.
