Potato salad with boiled egg mayonnaise

Ingredients:
Boiled egg mayonnaise:
3 hard-boiled eggs
50 ml oil
80 ml water
2 tablespoons apple cider vinegar
1/2 tsp salt
1 tsp mustard (mustard powder)
1 tsp liquid stevia/other liquid sweetener
juice of 1/2 lemon


Potato salad:
1 kg red potatoes (+ table salt)
1 carrot (300 g) + 1/2 tsp salt
1 red onion (+ a little wine vinegar)
4-5 pickles
200 g canned peas
salt to taste
