Hi, Kristy in the Rada Kitchen, and today I have a recipe for the Lunchroom Lady's Peanut Butter Bars. These are those peanut butter bars that you enjoyed while you were in school. Well, I actually have that recipe, and I'd like to share it with you.
Now, in your mixer you are going to mix one cup of peanut butter. This is the creamy variety, I don't think it really matters what kind you use. And then a stick and a fourth of butter or margarine. And now we're going to mix this on medium for three minutes.
After three minutes you'll get this nice, creamy butter and peanut butter mixture. And now to this we're going to add a fourth cup of white carol syrup. A half teaspoon of salt. One and a half cups sugar. And three eggs. And again we're going to mix it for three minutes.
After three minutes you get this nice, creamy mix. And now we're just going to add a cup and a half of flour just until it's blended in. We're just going to run it on low, we don't want to overmix it. You just want to incorporate the flour into the batter. And we're going to pour this into a 15 x 10 inch pan. That's a big pan, of course, because it's made for school. At the end of this video there's a conversion chart in case you want to cut it in half and put it in a 9 x 13. Now we'll put this in our 15 x 10 inch pan. Spread it out to the corners.
Now she doesn't say if you have to grease this pan, I don't think so because there's a lot of butter in this recipe and it shouldn't stick to your pan. Then you'll put this in a 325 degree oven for about 30 minutes.
So while our bars are in the oven baking, I'm going to mix up the peanut butter cocoa frosting. So you need three tablespoons of butter or margarine. Four tablespoons of peanut butter. Three tablespoons of cocoa. Two cups of powdered sugar. And a fifth cup of hot water or milk. Yes, that's a fifth, not a typo. Or three tablespoons. We're just going to mix this together until it's smooth.
So I let the peanut butter bars cool and now we'll spread on our peanut butter chocolate frosting. And then they'll be ready to cut and serve. So thanks to the lunchroom lady, here's a great recipe that I guarantee your family will ask for.
