Soya Chaap: 2 bowls
Oil: for frying
For Marination:
Curd: 1 bowl
Garlic paste: 1 tbsp
Ginger paste: 1 tbsp
Green chili paste: 1 tsp
Garam masala: 1 tsp
Meat masala: 1 tsp
Coriander powder (sukha dhaniya): 1 tbsp
Black pepper: 1 tsp
Red chili powder: 1 tsp
Turmeric (haldi): 1 tsp
Salt: 1 tsp
Kasuri methi: 1 tsp
For the Gravy:
Onion: 3 medium (chopped)
Tomatoes: 4 medium (chopped)
Cinnamon: 2–3 pieces
Bay leaves: 2–3
Ghee: 3–4 tbsp
Garam masala: 1 tsp
Meat masala: 1 tsp
Coriander powder (sukha dhaniya): 1 tbsp
Black pepper: 1 tsp
Red chili powder: 1 tsp
Turmeric (haldi): 1 tsp
Kasuri methi: 1 tsp
Water: 2 cups
Salt: to taste
Step-by-Step Instructions:
Frying the Chaap:
1️⃣ Thaw the frozen chaap and cut into small pieces.
2️⃣ Heat oil in a pan and shallow fry the chaap until golden brown.
3️⃣ Transfer to butter paper to remove excess oil.
Marinating the Chaap:
1️⃣ Whisk curd in a bowl until smooth.
2️⃣ Add garlic paste, ginger paste, green chili paste, garam masala, meat masala, coriander powder, black pepper, red chili powder, turmeric, salt, and Kasuri methi. Mix well.
3️⃣ Add the fried chaap pieces and coat gently.
Making the Gravy:
1️⃣ Heat ghee in a pan and add cinnamon, bay leaves. Sauté for 30 seconds.
2️⃣ Add onion paste and cook until golden brown.
3️⃣ Stir in tomato paste and cook for 5–7 minutes. Add a little water and continue cooking for 2–3 minutes.
4️⃣ Add garam masala, meat masala, coriander powder, black pepper, red chili powder, turmeric, and mix well.
5️⃣ Add the marinated chaap, water, and mix thoroughly.
6️⃣ Cook for 5–6 minutes until the gravy thickens. Adjust salt if needed.
7️⃣ Add Kasuri methi and garnish with fresh coriander leaves.
