I smoked two 9 lb boston butts on a modified Texas Original Pit, some call a stick burner because you burn real splits of oak, hickory, pecan or other hardwoods. The cook took 7 hours and 51 minutes to reach an internal temp of 200 & 201 F. It was removed from the pit, pulled, and sauce added. I did need more salt & pepper.
