🌿 Looking for a cozy, flavorful meal this winter? This Methi Khichdi combines the earthy goodness of fresh fenugreek leaves with the comforting flavors of traditional khichdi. Packed with nutrients and warmth, it’s perfect for dinner or a wholesome breakfast. Top it with a ghee tadka for that extra zing!

Ingredients:
For the Khichdi Base:
Ghee: 1 tbsp
Cumin seeds (jeera): 1 tbsp
Mustard seeds (rai): 1 tsp
Bay leaf: 1
Cinnamon stick: 1 inch
Curry leaves (kadhi patta): 5–6
Potato: 1 (cubed)
Coriander powder: 1 tbsp
Turmeric powder (haldi): 1 tsp
Salt: to taste
Cumin powder (jeera powder): 1 tsp
Dhuli moong dal: 1/2 bowl
Rice: 1/4 bowl
Water: 3 bowls
For the Methi Mixture:
Ghee: 1 tsp
Ginger-garlic: 1 tbsp (chopped)
Methi leaves (fenugreek): 1 bowl (chopped)
Salt: to taste
Turmeric powder (haldi): 1 tsp
Kashmiri red chili powder (lal mirch): 1 tsp
Water: 1/2 glass
For the Tadka:
Ghee: 1 tsp
Asafoetida (hing): 1/4 tsp
Kashmiri red chili powder: 1 tsp
Dried red chilies: 2
Cumin seeds (jeera): 1 tsp

Step-by-Step Instructions:
1️⃣ Prepare the Khichdi Base:

Heat ghee in a pressure cooker and add jeera, rai, cinnamon, curry leaves, and bay leaf. Sauté briefly.
Add cubed potatoes, coriander powder, haldi, salt, and jeera powder. Cook for 2–3 minutes.
Add dhuli moong dal and rice. Mix well and add 3 bowls of water. Close the lid and cook for 2 whistles. Let the steam release naturally.
2️⃣ Cook the Methi Mixture:

Heat ghee in a pan and sauté ginger-garlic for a minute.
Add chopped methi leaves, salt, haldi, and Kashmiri lal mirch. Cook until the methi is soft and aromatic.
Add 1/2 glass of water and the cooked dal-rice mixture. Adjust consistency as needed and simmer for a few minutes.
3️⃣ Prepare the Tadka:

Heat ghee in a small pan. Add hing, Kashmiri lal mirch powder, dried red chilies, and jeera. Stir for a few seconds.
Pour the tadka over the khichdi for a rich, aromatic finish.
4️⃣ Serve & Enjoy:

Serve the Methi Khichdi hot with papad, pickle, or a dollop of ghee for the ultimate comfort meal.
