Drumstick dal (South Indian Sambar | Moringa dal)

Ingredients:
1 cup toor dal (pigeon peas), cooked and mashed
2-3 drumsticks, cut into pieces
1 small onion, chopped
2 tomatoes, chopped
2-3 dried red chilies
1 teaspoon mustard seeds
Few curry leaves
1 tablespoon ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1 tablespoon tamarind pulp
1 tablespoon sambar powder
Salt to taste
Fresh coriander leaves for garnish
2 tablespoons oil/ghee

Instructions:
1. Boil the tomatoes along with the dal until soft.
2. In a pan, heat oil/ghee and add mustard seeds. Once they splutter, add dried red chilies and curry leaves.
3. Add chopped onions and saute until they turn golden brown.
4. Stir in ginger-garlic paste and cook until the raw aroma disappears.
5. Add turmeric powder, red chili powder, and coriander powder. Mix well and cook for a minute.
6. Add drumstick pieces and cook for a few minutes.
7. Pour in enough water to cover the drumsticks, and let it cook until the drumsticks are tender.
8. Once the drumsticks are cooked, add tamarind pulp, sambar powder, and salt. Mix well.
9. Add the mashed dal to the drumsticks and tomatoes and mix everything together.
10. Let the dal simmer for a few minutes, allowing the flavors to meld together.
11. Garnish with fresh coriander leaves.
12. Serve hot with rice or idli/dosa.
