This is our truly irresistible risotto which is packed full of veggies, super creamy and is 100% vegan. It really is irresistible, you'll love this risotto!

This risotto is bursting with colour, flavour, and healthy goodness. We’re big fans of getting as much green into our bodies as possible to give us the vital nutrients we need.

This dish is testament to that, but it’s also delicious. Cook slowly, add the stock bit by bit and you’ll have a dish guaranteed to please! This will allow the risotto rice to get rich and creamy. Make sure it's soft but still has a little bite to the rice!

Feel free to switch up the veggies to suit your tastes, this is just the veggies we personally love to use! Mushroom risotto is a common recipe as well and they'd go perfectly in this.
