Soft and Moist Banana Muffins | Just 5 INGREDIENTS!

Don't be fooled with just 5 ingredients as these banana muffins are irresistibly soft and moist. Best consume plain or with chocolate chips on top. These are definitely a super easy and delicious treat, packed with banana flavor and ready in less than 20 minutes.

You’ll need:
• 3 medium overripe bananas/about 1 cup (mashed)
• 2/3 cup light brown sugar (packed)
• ½ cup unsalted butter (melted & cooled)
• 3 small/medium eggs (2 whole eggs + 1 egg yolk) room temperature
• 1 ¼ cup self-rising flour (spooned & leveled)
• chocolate chips/chopped walnuts (OPTIONAL: toppings)

Makes 12 cupcake size muffins
Makes 9 standard size muffins

:: HELPFUL HINTS ::
Measure your flour correctly (spoon & level method). Adding too much flour will result to dry muffins when baked. Fluff your flour with a spoon, spooned it into your measuring cup, and use the back of the knife to level it off.

Make sure that eggs are at room temperature for easy mixing and to create a smooth and creamy batter.

Mix batter until just combined as over mixing results to a tough muffin texture.

Let the muffins rest in the baking pan for 1- 3 minutes. Transfer to wire rack to finish cooling.
