Spring Mix Salad with Warm Bacon Vinaigrette

This isn't a new recipe; it's been out there for years. But I decided to give it a try and I love it. The warm bacon vinaigrette is a winner indeed...LOOK, you must give this recipe a try. I have future
plans for the bacon vinaigrette, I can't share the idea just yet, just be on the lookout.

Ingredients:
3 hard boiled eggs
6 to 8 cooked bacon, crumbed
1/2 red onion, sliced
8 cups fresh, spring mix salad, 50/50 mix

Dressing:
3 tablespoons bacon drippings
3 tablespoons red wine vinegar
2 teaspoons sugar
1/3 teaspoon Dijon mustard

salt and black pepper to taste

Directions:
1. Place salad mix in a large bowl.
2. cook bacon in the air fryer, stove top, or oven, cut into bite size pieces. SAVE BACON GREASE.
3. Place hard boil egg slice, crumbed bacon, onion slices on top of salad mix.
4. mix vinegar, sugar, mustard, salt, and pepper. (YOU CAN ADD A TASTE OF HONEY AS WELL) WHISK TOGETHER, add to bacon grease and whisk.
5. drizzle with warm dressing and toss well.
