Let’s make the popular roti canai, it’s everyone favourite in Malaysia and Singapore because known for its flakiness and layer of crispiness. It’s also called roti prata and originated from India. You’ll often find it in Mamak stalls, and it has become a staple breakfast for us. You can also enjoyed it as a tea-time snack. Roti canai is best served with chicken curry or even enjoy on its own. This recipe is perfect for a small family and can makes about 10 roti canai. It's super easy to make! I’ll be uploading the chicken curry recipe in my next video, so stay tuned. Recipe:
Dry ingredients:
500g all purpose flour

Wet ingredients:
1 tbsp sugar
4 tbsp condesed milk
1/2 tsp salt
190ml water
20g butter or magarine
1 egg

Other:
Extra margarine for rubbing on the dough
Oil for cooking

Method:
In a bowl, mix all the wet ingredients. Add the mixture into the flour.

Mix using a stand mixer for about 5 minutes, or knead for about 15 minutes if using your hands. Let the dough rest for 15 minutes, and repeat this process 3 times.

Divide the dough into 10 equal portions, about 100g each. Rub each dough ball with margarine, cover with cling wrap, and let it rest for 8 hours.

Oil your working surface, place one dough ball on it, and drizzle some oil over the dough. Use your palm to flatten the dough evenly into a 7-inch wide circle.

If you're comfortable, you can toss the dough in the air to stretch it bigger and wider (I’m still practicing this myself!). If not, gently stretch the dough in all directions until it's very thin. It's okay if the dough tears slightly; this is normal.

Drizzle some oil on the stretched dough, then lift one side and swirl it into a circle, tucking the other end underneath.

Let the dough rest for 10 minutes. Afterward, use your fingers to flatten the rested dough into a 15-19 cm diameter circle.

Heat some oil in a pan over medium heat, place the dough in the pan, and cook for 2 minutes. Flip it and cook for another minute, or until golden brown.

Clap the roti canai with your palms to make it flaky and serve with chicken curry.
