Ingredients:
1 whole chicken (6lbs), cleaned, cut up & washed

4 cups of parboiled rice, washed and soaked in 3 cups of water

Salt & black pepper

5 tbsps of green seasoning (20 cloves of garlic, 4 inch knob of ginger, 12 chadon beni/bandhania leaves & a bunch of cilantro

3 tbsps of pimento & hot pepper minced

2 tbsps of ketchup

1 tbsp of Yellow Label Dark Soy Sauce (different brands vary in color and richness)

1 dry coconut blended with 2 cups of water

14 oz of frozen pigeon peas (cans are measured in liquid ounces and you might need about 3 cans to equal this amount)

1.5 tbsps of avocado oil

4 tbsps (1/4 cup) of brown sugar

2 cups of pumpkin

1 sweet pepper

1 onion

2-3 stalks of celery

2 cups of carrots

A bunch of thyme

1 bay leaf

2 tbsps of roucou/annatto powder

8 cups of water

2 tbsps of butter

Fresh herbs to finish

I used 14 cups of liquid for a moist pelau. Use 10 cups for a drier pelau
