Ground Beef Taco Lasagna – Cheesy, Meaty, and Irresistible! 🌮
If you love tacos AND lasagna, get ready for the ultimate mash-up! This Ground Beef Taco Lasagna is loaded with layers of seasoned beef, melty cheese, tortillas, and all your favorite taco toppings. It’s quick to prep, budget-friendly, and perfect for busy weeknights or feeding a crowd.

Ingredients:
1 lb ground beef (or ground turkey)

1 packet taco seasoning (or 2 tbsp homemade)
1/2 cup water
1 can (10 oz) Rotel diced tomatoes & green chilies (drained)
1 can (15 oz) refried beans
1 cup sour cream
2 ½ cups shredded Mexican blend cheese
1/2 cup chopped green onions (optional)
6–8 large flour tortillas (or corn tortillas if preferred)
Optional: black olives, jalapeños, chopped cilantro

1. Preheat oven to 375°F (190°C).
2. In a skillet, brown the ground beef over medium heat. Drain excess fat.
3. Stir in taco seasoning, water, and Rotel. Simmer for 5 minutes until thickened.
4. In a small bowl, mix refried beans and sour cream until smooth.
5. In a greased 9x13" baking dish, layer as follows:
Tortillas
Refried bean mixture
Taco meat
Shredded cheese
Repeat layers (about 2–3 times), ending with a generous cheese layer on top.
6. Cover with foil and bake for 20 minutes. Remove foil and bake another 10 minutes until bubbly.
7. Garnish with green onions, jalapeños, olives, or fresh cilantro if desired.
8. Let rest 10–15 minutes before slicing. Serve with salsa, guac, or a dollop of sour cream!
