Edamame and Avocado Toast:
Add 1 cup defrosted edamame, 1 ripe avocado, 1/2 tsp salt, 1/4 tsp black pepper, 1/2 tsp garlic powder, 1/4 cup non dairy milk, and juice from ½ of a lime to a food processor or blender. Blend/Process until smooth or until it reaches your desired consistency. Add the mixture to sliced sourdough bread (or bread of your choice) - option to toast the bread - and top with some chili crunch and a drizzle of maple syrup.

Smashed Purple Potato with Grated Tofu and Chimichurri Sauce:
Preheat the oven to 400 degrees. Add a cooked purple sweet potato in between two layers of parchment paper. Using something heavy (ie. glass or book) press down until the potato is flat. Add to the airfryer on 400 degrees for 15 minutes.

Next, grate ½ block of super firm tofu. Add to a bowl and season with ½ tbsp neutral oil, 2 tbsp of nutritional yeast, 1 tsp garlic powder, 1 tsp onion powder, ½ tsp turmeric, ½ tsp curry powder, ¼ tsp smoked paprika, and ¼ tsp black pepper. Combine well and transfer to baking sheet and place in the preheated oven for 5-7 minutes.

While that is baking, prepare a quick chimichurri sauce by adding 3 grated garlic cloves, a handful of roughly chopped cilantro and parsley, 1 minced fresno pepper, 3-4 tbsp avocado oil, 1-2 tbsp red wine vinegar, and salt and black pepper to taste

Yogurt Bowl:
Add your choice of yogurt to a bowl and top with your choice of fruit and homemade granola

Banana Pudding Inspired Chia Seed Pudding:
Whisk together 1.5 cups of non-dairy milk and 2 tbsp chia seeds. Wait 2-3 minutes and whisk together again before refrigerating for about 1 hour. Mash 1 banana and when ready to enjoy, combine half of the mashed banana mixture to vanilla yogurt, top with the chia seed pudding, the remaining mashed banana, and some granola or vanilla wafers

Blueberry Oatmeal Loaf:
1.5 cups oat flour
2 tsp baking powder
½ tsp baking soda
½ tsp cinnamon
1 medium banana, mashed
¼ cup maple syrup
¼ cup avocado oil
½ tsp vanilla extract
⅓ cup apple sauce
2 cup fresh or frozen blueberries
