Today we bring you a dish from Huai’an, which occupies a special place in Huaiyang cuisine. It is also known as the First Dish as it’s the first warm dish to be served after the leading cold dishes. The base of the soup is pig knuckle broth, and there is pork skin, cuttlefish, chicken cake, wood ears, and Chinese cabbage in it. The soup is fresh and the ingredients are abundant. What a nice reunion dish!
