INGREDIENTS:
¾ cup of unsalted butter
½ cup of unpacked dark brown sugar
½ cup of sugar
1 large egg
1 tsp of vanilla extract
1 ¼ cups of all-purpose flour
½ cup of cocoa powder
1 tsp of baking soda
½ cup of chocolate-covered mint candies, crushed
¾ cup of mint chocolate sandwich cookies, crushed
White fondant
Black fondant

INSTRUCTIONS:
1. In a large bowl, mix the butter at room temperature, brown sugar, and white sugar. Cream together.
2. Add the egg and the vanilla extract. Mix together.
3. Add the flour, cocoa powder, baking soda. Mix until combined.
4. Add the mint candies and cookies to the dough. Stir together, dough will be thick and sticky. Chill overnight.
5. Preheat oven to 350 ºF. Make a thick layer with the dough over wax paper and bake for 8 - 10 minutes or until edges look firm but the center is still soft. Cool for 1-2 minutes and cut into the shapes of Hank & Roger. Let cool completely.
6. Use white and black fondant to model the eyes, and now it’s done!
