Ingredients:
4 cups / 140g shredded kale
1 Tbsp. cold-pressed olive oil
1 Tbsp. freshly squeezed lemon juice
1/4 tsp. sea salt

Directions:
1. Wash kale well and spin dry.
2. Remove tough ribs, roll leaves into a cigar shape and slice across to make ribbons.
3. Place in a large bowl with the olive oil, salt and lemon juice. Using your hands, rub kale together as if you were giving it a massage, for two whole minutes, until the kale leaves are dark green and tender.
