1. KODO MILLET DOSA
Time stamp 1:48
Ingredients
1. Kodo millet: 1.5 Cup
2. Split black lentil: 1/2 Cup
3. Methi seeds: 1 tsp
4. Beaten rice: 1/4 Cup
5. Salt
6. Ghee
7. Chopped onion: 1 Small
8. Grated carrot: 2 Small
9. Cottage cheese (grated)
10. Chaat masala: 1 Pinch

Method
-Mix kodo millet, black lentil and methi seeds, wash it atleast for 3-4 times
-Let it soak for 4 hours
-Now grind it with beaten rice into a coarse paste
-Transfer the batter into a bowl, mix and let it ferment for 8 hours
-Mix the batter with salt and water to get the desired consistency
-Grease the hot pan with ghee and pour a small portion of the batter on it and spread evenly
-Add ghee (1 tsp) and cook it on low flame
-Add the veggies and grated cottage cheese, chaat masala on one half of the dosa and cover it with the other half
-Delicious kodo millet dosa is ready


2. KODO MILLET IDLI Time stamp 5:50
Ingredients
1. Kodo millet: 1.5 Cup
2. Split black lentil: 1/2 Cup
3. Methi seeds: 1 tsp
4. Beaten rice: 1/4 Cup
5. Salt
6. Ghee
Method
-Mix kodo millet, black lentil and methi seeds, wash it atleast for 3-4 times
-Let it soak for 4 hours
-Now grind it with beaten rice into a coarse paste
-Transfer the batter into a bowl, mix and let it ferment for 8 hours
-Mix the batter with salt and water to get the desired consistency
-Grease the idli moulds with ghee and pour the batter into it
-Steam it at high flame for 12 mins in a pressure cooker
-Delicious kodo millet idli is ready


3. BARNYARD MILLET POHA Time stamp 8:22
Ingredients
1. Millet: 1 Cup
2. Ghee: 1 tsp
3. Salt
4. Olive oil: 1 tsp
5. Mustard seeds: 1/4 tsp
6. Cumin seeds: 1/4 tsp
7. Curry leaves
8. Chopped onion: 1 Small
9. Chopped green chilli: 1-2
10. Turmeric powder: 1/4 tsp
11. Boiled potato (diced): 1 Medium
12. Sugar: 1 tsp
13. Lemon juice: 1/4 tsp
14. (Optional) Chopped tomato: 1 Medium
15. Coriander leaves

Method
-Soak millet before cooking for atleast 4 hours
-Boil millet with ghee and salt in water( 2 Cup) and then cook it at medium to low flame till the millet becomes soft
-Heat oil and roast mustard and cumin seeds, curry leaves
-Add onion and green chilli, roast it
-Add turmeric, salt (1/4 tsp) and boiled potato, mix and roast
-Now add the boiled millet and mix well
-Lastly add sugar and lemon juice, mix
-Add chopped tomato and garnish with coriander leaves. mix
-Cover and cook for 10 min at low flame
-Delicious barnyard millet poha is ready


4. PROSO MILLET CUTLET Time stamp 12:32

Ingredients
1. Proso millet: 2-3 Cup
2. Ghee: 1 tsp
3. Salt
4. Grated boiled potato: 1 Medium
5. Chopped onion: 1 Small
6. Chopped coriander leaves
7. Roasted cumin powder: 1/2 tsp
8. Red chilli powder: 1/4 tsp
9. Garam masala powder: 1/2 tsp
10. Chaat masala powder: 1/2 tsp

Method
-Soak millet before cooking for atleast 4 hours
-Boil millet with ghee and salt (1 pinch) in water( 2-3 Cup), cover and cook it at medium to low flame till the millet becomes soft
-Let it cool
-Mix it with potato, onion, coriander leaves, salt(1/2 tsp), cumin powder, red chilli powder, garam masala and chaat masala powder
-Now make small tikkies from it
-Grease the hot pan with ghee (1 tsp) and roast the tikkies
-Delicious proso millet cutlet is ready


5. FOXTAIL MILLET POLAO Time stamp 17:12
Ingredients
1. Ghee: 1-2 tsp
2. Ginger : 1 Inch
3. Garlic cloves: 5-6
4. Green chilli: 1
5. Bay leaf: 1
6. Clove
7. Green cardamom (crushed): 1
8. Cinnamon
9. Cumin seeds: 1/2 tsp
10. Chopped mushroom
11. Chopped carrot: 1 Medium
12. Chopped onion: 1 Medium
13. Chopped Capsicum (Red, Yellow and Green): 1 Each Small
14. Salt: 1/4 tsp
15. Red chilli powder: 1/4 tsp
16. Garam masala powder: 1/2 tsp
17. Foxtail millet: 1 Cup
18. Coriander leaves
19. Lemon juice: 1/4 tsp

Method
-Soak millet before cooking for atleast 4 hours
-Crush ginger, garlic cloves and green chilli
-Heat ghee and roast bay leaf, clove, green cardamom, cinnamon and cumin seeds
-Add crushed ginger, garlic and chilli paste in it and roast
-Add onion and roast it
-Now add all the veggies, mix and roast
-Season with salt, red chilli and garam masala powder, mix
-Add soaked foxtail millet and mix well
-Add salt (1 tsp/ as per taste) and mix
-Add water (2.2-3 Cup), cover and cook for 20-25 min (Stir occasionally)
-Garnish with coriander leaves and lemon juice
-Delicious foxtail millet polao is ready
