Borani Banjan - shallow fried eggplant cooked in a tomato sauce & topped w/ a garlic yogurt sauce

INGREDIENTS
1 large eggplant
Vegetable or Canola oil (for frying)
4 roma tomatoes
3 cloves of garlic
1/2 Jalapeño
1/4 tsp turmeric
8oz can of tomato sauce
1/4 cup water
Salt & Pepper to taste
Dried mint
Hot red pepper (optional)

How to make the garlic yogurt sauce:
1/3 cup plain yogurt
1 small garlic clove (crushed)
Salt (to taste)
Water (as needed)

In a bowl mix the plain yogurt with the clove of crushed garlic. Add in salt to taste & water to thin out the yogurt. That's it. Super easy!

Serve the eggplant with Afghan bread or your choice of flatbread. Naan or Pita Bread would be perfect choices. You can also serve the eggplant as a side dish with rice.
