Authentic Dishes With My Personal Touch 😍

Ingredients

Chicken -1 kg
For marination

Chilli Powder -1/2tbsp
Kashmiri chilli powder -11/2 tbsp
Turmeric powder -1/4tsp
for grinding -
Cumin seeds -1/2tsp
Pepper -1/2tsp
Cloves - 3
Cinnamon -1
Cardamom - 3

Oil - 4 tbsp
Lemon Juice - 1tbsp
Salt - 1tsp
Ginger Garlic Paste -1 tbsp
Chicken Stock - 2 cubes
Green chilli -4-5

Rice - 3 cups
Water - 6 cups
Salt - 11/2 tsp
Onion -1/2
Capsicum -1tbsp
Ginger garlic paste -1 tsp
Oil -2 tbsp
Cloves -4
Cinnamon -1
Cardamom -3
Dried lemon -1 opt
Green chilli -5
Charcoal -2


For chutney

Tomato -2
green chilli -4-5
salt -
lemon juice -1tbsp
coriander leaves -handfull

Serving for -5-6

Method

Grind cumin seeds,pepper,cloves,cinnamon , cardamom.

Marinate the chicken in chilly powder, Kashmiri chilly powder, turmeric powder, ground mixture, ginger garlic paste, maggi chicken stock, lemon juice, salt, green chilly and 4 tbsp of oil.Marinate it overnight.

Soak the Sella rice after washing it.

Cook the chicken in a deep bottomed pan without extra oil. Cook both the sides on high flame. Cook for 10 mins. Do not close the lid. It would be like a grilled chicken.
Add some oil to another pan for cooking the rice . add cardamom,cloves,cinnamon and bay leaf.saute it. Add a dried lemon after making some holes on it. Add small onion and capsicum and ginger garlic paste. Saute well. Add chicken stock (optional). Add the water . check the salt. Add the drained rice. On high flame let the water boil. Close the lid. Then reduce the heat. Once the rice is cooked partially, spread it over the grilled chicken . add some green chillies on the top. Dum the entire pot for 20 mins. before you close the lid burn some charcoal in a small khatori. Make the rice fluffy with a fork. You can mix the rice and chicken if you want.


Tomato chutney – grind the tomatoes into minute pieces. Do not puree it. Add some green chillies and coriander leaves and whip it. Remove it to a bowl. Add lemon juice and salt. Mix well and keep aside.
