Here's a simple and delicious recipe for Matar Tofu Pulao:

Ingredients:

1 cup basmati rice
1/2 cup green peas
200 grms Tofu
15 Cashews
2 tsp ginger-garlic paste
1 tsp chilli powder
2-3 green cardamom pods
1 bay leaf
1 tsp jeera/ cumin
1 tsp garam masala
1 tablespoon ghee
2 tablespoons oil
Salt to taste
1/2 lemon
2 cups water

Instructions:

Wash and Soak the rice in water for about 30 minutes. Drain and set aside.

In a pressure cooker, heat oil and add tofu cubes; fry them till they lightly browned and take them off.

Add ghee, cumin seeds, green cardamom pods, and bay leaf. Fry for a minute until the spices release their aroma.

Add ginger-garlic paste, fry for 1-2 minutes until the raw smell disappears.

Add cashews and green peas, cook for 2-3 minutes until the peas are slightly tender.

Add garam masala and salt to taste.

Add the soaked rice and gently mix everything together, taking care not to break the rice grains.

Pour 2 cups of water and squeeze lemon.

Once it starts boiling, reduce the heat to low, cover and cook for 20 mins.

Serve the Green Peas Tofu Pulao hot with raita.

Ingredients:

1 cup curd
½ tsp each – Red chilli powder, Jeera Powder, Pepper Powder, Chat Masala, and salt
1 small onion (chopped)
1 tbsp coriander (chopped)
½ cup spice boondi

Instructions:

Mix all the above listed ingredients together and keep aside for 10 mins and enjoy with pulao!!!!!
