The benefits of fermented foods like kimchi are well documented, but the cultural significance around the preparation of kimchi is less well-known outside of Korea. Like ‘stir up Sunday’, Koreans have Kimjang, where villagers gather in late autumn/early winter to make kimchi for the months ahead. At these communal get together recipes are passed down through families, typically from one generation to the next. Newcomers to the community might also introduce their own village recipes. This tradition is still commonly practiced in both North and South Korea, and sharing kimchi ensures that everyone in the community has food to sustain them through the winter. Kimjang was inscribed as a UNESCO intangible cultural heritage in 2013 (South Korea) and 2015 (North Korea).
