INGREDIENTS (Makes 8)
材料:制作8個大菠蘿包

1) WATER ROUX (tang zhong)- 湯種 (面糊):
25g bread flour (~2tbsp) - 2湯匙高筋麵粉
75ml water - 75克水

2) BUN DOUGH - 包皮:
275g bread flour - 275克高筋麵粉
50g sugar (inc: 1tsp for yeast use) - 50克糖 (包括一茶匙酵母用)
7g active dried yeast (2tsp) - 7克干酵母 (2茶匙)
1 egg - 1只雞蛋
125ml warm milk (microwave 30s)- 125毫升温奶
1/2 tsp salt - 半茶匙鹽
30g butter - 30克牛油 (微波爐30秒)
(Inc: 1 tbsp butter -包括約1湯匙牛油擦麵團表面)

3) PINEAPPLE TOPPING - 菠蘿酥皮:
100g all purpose flour - 100克普通面粉
50g lard/butter - 50克豬油/固體牛油
1/2 beaten egg - 半只打發雞蛋(半只掃頂)
1/4 tsp baking powder- 1/4茶匙泡打粉
1/4 tsp baking soda - 1/4 茶匙梳打食粉
1 tbsp custard powder - 1湯匙吉士打粉
1 tbsp milk powder - 1 湯匙奶粉
50g sugar - 50克糖
