Hello YouTube, today in this video I will show you how to make this deliciously thick and creamy raspberry cheesecake. The base of the cheesecake is a baked New York style vanilla cheesecake which is then topped with a thick raspberry sauce.

There was a few mistakes made that I'd like to try next time, this includes using a 7" cake tin instead of a 6" cake tin, just to get the layers slightly thinner. I'd also try freezing the cake for an hour or so after adding the acetate and raspberry sauce in order not to lose any sauce when removing the acetate.

I've listed the ingredients for the recipe below:

Cheesecake ingredients:
180 g of plain digestive biscuits
90 g of melted unsalted butter
400 g of Full fat soft white cheese
120 g of white caster Sugar (or granulated or icing sugar)
200 g of Sour cream
150 ml of Double cream
2 large eggs
2 tablespoons of Corn flour
1 vanilla pod (or 1.25 tablespoons of vanilla extract)
1/4 teaspoon of salt

Raspberry layer ingredients:
225g g of raspberries
75 g of raspberries (halved or chopped into large chunks)
100 g of granulated sugar
1 tablespoons of Corn flour
1/4 teaspoon of salt
