Methi thepla, truly is "Safar ka sathi", basically your friend for journey. Thepla is a popular Gujarati flat bread made with Wheat flour, Gram flour and Millet flour flavored with spices and fenugreek leaves. If you are making them to last for longer use oil generously, otherwise they will get spoiled soon and will be dry in taste.

Ingredients -

Wheat flour - 1 Cup
Gram flour - 1/4 Cup
Millet flour - 2 tbsp
Grated garlic - 1 tsp
Cumin coriander powder - 1 tbsp
Red Chili powder - 1 tsp
Turmeric powder - 1 tsp
Salt - 1tsp
Fenugreek leaves - 1/4 Cup
Curds - 1/2 Cup
Water - if needed
Oil - 1 tsp (for dough), more to cook


Method -

1. Mix wheat flour, Gram flour, millet flour, garlic, cumin coriander powder, red chili powder, turmeric powder, salt, fenugreek leaves using curds in parts. Use water if required.
2. In the end use 1 tsp oil, to massage the dough.
3. Let the dough rest for 30 mins.
4. Take small ball of dough, roll it thin using rolling pin.
5. Place it one a hot tawa, once you see bubbles flip the thepla.
6. Apply oil on top and on the sides.
7. Press softly to cook both sides.
