Pork spit-roast kontosouvli wrapped in caul fat, our favorite. We've shown many pork spit-roast kontosouvli recipes before but this is the recipe we usually do when we grill for our family and friends off-camera. It's very tasty, wrapped in caul fat, and slowly grilled for many hours over the charcoals. You can also use this recipe for the small spits as well if you want to grill it quickly or rather try both ways or the variations we recommend so you can pick your favorite! You can use any part of the animal but it’s best to avoid using pork shoulder and leg. The right combination of spices and herbs will also give your spit-roast a unique flavor.
