Following a trip visiting English Vineyards with a group of fellow Masters of Wine in September, I attended the annual WineGB tasting in London. After tasting the wines from the Hundred Hills Winery I just had to go and visit the estate to find out where these beautiful wines originated from.

Here we see six bins in the cellars that between them hold about 20,000 magnums of their sparkling wine. Sealed with crown caps (similar to beer bottle tops) the wine has gone through its second fermentation in these magnums and is now ageing with the dead yeast that is left after fermentation. As the wine ages the yeasts break down as part of a process called autolysis, imparting sugars and proteins into the wine, giving body and helping to fix the bead of tiny bubbles in the wine. Wines bottled in magnum age more slowly, developing an extra elegance and finesse.
