Baigan ka raita

INGREDIENTS::

Yogurt – 250 gm
Brinjal – 2 small size
Ghee or oil – To fry the brinjal
Green chili – 2 (cut finely)
Salt - ¼ small spoon (as per taste)
Black Mustard Seed - ½ small spoon
Roasted cumin seed powder – 1 small spoon
Coriander – 1 tablespoon (cut finely)

METHOD::

1. Wash n pat dry aubergine 🍆 .
2. Cut into circles.
3. Mix 1/2 tsp of turmeric pd, Kashmiri red chilli pd n salt to taste.
4. Rub spices on the eggplant pieces.
5. Heat mustard oil, add brinjal 🍆 pieces one by one, fry both sides.
6 Fry them till they turn light brown and then take them out in a plate.
7. Mix salt as per taste to yogurt, stir the yogurt well so that it gets a smooth consistency.

8. Pour yogurt on the fried brinjal 🍆.

For Tempering::

1. Put used mustard oil small in a small frying pan and heat it.
2. Add whole red chili, chopped coriander stems, slitted green chillies and black mustard seed to the hot oil.
3. After frying them, turn off the burner. Mix this tarka in the raita.

9.Mix half a spoon of roasted cumin seed powder and half a spoon of coriander in the raita.

10. The Brinjal Raita is ready now. Take it out in a bowl. 11. Garnish it with the remaining roasted cumin seed powder and coriander.
12Now refrigerate this bowl of raita for half an hour.

Serve and eat this cold raita along with hot meals. Enjoy.
