Lipids: Hydrogenation of Unsaturated Fats

We will cover the hydrogenation addition reaction of unsaturated fats (alkenes or double bonds) including examples. We will go over the method of "opening the doors" which is the double bond opening to accept the addition of hydrogens.

In this reaction an unsaturated fat will be converted to a saturated fat, which is a common process found within the food processing industry.
