High Protein Snickers Baked Oatmeal – Serves 6
Macros (Approximate): 1 Serving
Calories: 480 kcal | Carbs: 43g | Protein: 24.5g | Fat: 27g | Fiber 6.7g | Sugar: 17g

1 cup ripe bananas, mashed (about 230g, 2-3 bananas apple sauce)
½ cup peanut butter (120g)
2 eggs (100g)
2 tbsp maple syrup (30g)
1 1/2 cup milk (360g) (I used 1 cup soymilk 1/2 cup cashew milk)
1⅓ cup sprouted rolled oats (133g)
1/3 cup ground flaxseed (40g)
1/3 cup hemp seeds (45g)
½ tsp cinnamon
¼ tsp salt
2 tsp vanilla extract
4 servings collagen powder (varies by brand, 40-50g total or 2 servings of vanilla protein powder)
½ cup peanuts (65g)
1/3 cup chocolate chips (60g)
2 tbsp chocolate chips (20g)

Chocolate Drizzle Topping (OPTIONAL):
1 tbsp peanut butter (16g)
2 tbsp chocolate chips (20g)
2 tbsp salted peanuts (16g)

• Preheat the oven to 350 °F (180 °C). Slightly grease a 9-inch x 9-inch baking pan.
• Peel the bananas, place them in a medium sized bowl and mash with a form until a smooth puree form.
• Add eggs, milk, peanut butter, maple syrup, cinnamon, salt and vanilla. Whisk until evenly combined.
• Add oats, flax and hemp seeds. Mix until combined. Mix in peanuts and chocolate chips.
• Pour into your baking dish, add two tbsp of chocolate chips on top (optional)
• Bake the oatmeal for 20-30 minutes at 350 °F (180 °C) until set but still moist in the center. You can bake it longer if you prefer a dryer oatmeal texture, it's up to you.
• Let it cool down in the pan for 20 minutes
• For drizzle, melt the chocolate chips and peanut butter until smooth.

Drizzle it over the baked oatmeal and sprinkle some salted peanuts. Enjoy this alone or with your favorite yogurt.
