We had the best time making this super easy and delicious recipe out of the Unofficial Epcot Cookbook. Who doesn't love drinking and eating around the world and I loved bringing the magic of Epcot into my kitchen.

RECIPE (The Unofficial Disney Parks Epcot Cookbook)

Ingredients
½ cup ground chorizo
¼ medium yellow onion, peeled and sliced into strips
½/ medium poblano pepper, sliced into strips
6 ounces shredded
Monterey jack cheese
4 (6"""") flour tortillas

Instructions
1. Preheat broiler to high with rack in top of oven.
2. In a small skillet over medium-high heat, brown chorizo until cooked through, 5-8 minutes. Drain and set chorizo aside.
3. In same skillet over medium-high heat, cook onion and pepper 5-10 minutes until soft. Set aside.
4. Place cheese in an ungreased 6"""" ramekin. Place chorizo, onion, and pepper in the middle of cheese. Place dish on top rack of oven and broil 2-3 minutes until cheese is melted and bubbly but not burnt.
5. Immediately scoop cheese mixture into tortillas, roll up, and serve.
