Ingredients you will need -

For the Marinade -
Fresh orange juice – 60 ml
Ground black pepper – 1 tsp
Fine sea salt – 1 tsp
Chicken thighs (cut into 1 1/2 inch cubes) – 500 g
For the Batter -
Eggs – 2 whole
Cornstarch – 100 g
All purpose flour – 100 g
Cold water – 130 ml (plus extra as needed)
Sesame oil – 30 ml

For Frying -
Peanut oil – enough to fill wok 2 inches deep

For the Sauce -
Sesame oil – 30 ml
Red chilli flakes – 1½ tsp
Minced garlic – 2 tbsp
Minced ginger – 2 tbsp
Packed brown sugar – 60 g
Rice vinegar – 60 ml
Dark soy sauce – 30 ml
Honey – 25 g
Orange zest – 2 tsp
Freshly squeezed orange juice – 80 ml

To Thicken Sauce -
Cornstarch – 20 g
Water – 40 ml

For Serving -
Boiled jasmine rice – as needed
Sesame seeds – for garnish
Scallions, chopped – for garnish
