Ingredients:
½ cup (115 g) unsalted butter
¾ cup (150 g) sugar
1 can (20 oz) 567 g pineapple rings in juice, drained, juice reserved
Maraschino cherries (optional)
1 ½ cups(180 g) all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
½ cup(100 ml) heavy cream
¼ cup(60 ml) pineapple juice
2 large eggs
1 tablespoon vanilla extract
For topping
¼ cup (56 g) unsalted butter
½ cup (110 g) brown sugar
1 teaspoon rum essence
1. In a medium-sized pan, melt butter and brown sugar over medium heat until dissolved. Remove from heat and stir in 1 teaspoon of rum essence.
2. Pour the prepared topping into a non-stick cake pan, coating the bottom evenly. Arrange pineapple rings on top and place a maraschino cherry in the center of each ring.
3. In a medium bowl, cream softened unsalted butter and granulated sugar until light and fluffy.
4. Add eggs one at a time, beating well after each addition.
5. Whisk together all-purpose flour, baking powder, and salt in a separate bowl.
6. Add half of the flour mixture to the butter mixture, and mix well. Then add heavy cream in two stages, mixing after each addition.
7. Sift in the remaining flour mixture and slowly incorporate pineapple juice and vanilla extract.
