蝦米辣 • 南洋美食~星馬系列

極力推薦的一道南洋辣椒蘸料,用途广泛,可以用做佐料,用来炒饭炒菜炒海鮮炒肉類,拌饭拌面都可以,爱怎么吃就怎么吃!沒錯,就是那麼誇張,可以說得上是百搭的辣椒醬,就算直接食用也可以,還超級下飯的哦!

Hae Bee Hiam 蝦米辣,星馬家庭常見的一道辣椒蘸料,作法簡單食材也不複雜,只不過要很有耐心的慢慢拌炒,有的人喜歡攪拌到細滑然後炒到深紅色,這是隨著個人喜好!而我喜歡略帶顆粒的口感,吃起來比較有層次!冷卻後可以收在冰箱兩個星期,慢慢食用!切記不可以弄到水哦!

食材 Ingredient for :
蝦米(浸泡至軟,瀝乾)
~100g
Dried Shrimp ( Soak until soft and drain )



辣椒干(去籽,洗乾淨和瀝乾)
~50g
Dried Chilli ( Remove seed, soak until soft and drain )


紅辣椒 (去籽)
~ 50g
Red Chilli ( Remove seed )

紅蔥頭 ~ 50g

Shallots


姜塊 ~ 15g

Ginger

蒜頭 ~ 20g

Garlics


食油
~ 100ml

Cooking Oil


砂糖
~ 3tb
Sugar



鹽巴 ~ 1tb
Salt

A highly recommended Dried Shrimps Spicy Sambal dipping sauce has a wide range of uses. It is used for fried rice, fried vegetables, fried seafood, fried meat, and serving with rice or noodles. That's right, it's so exaggerated, it can be said to be a versatile chili sauce, even if it is eaten directly with rice!!

It pronounce Hae Bee Hiam in Fujian dialect, a common chilli paste in Malaysia and Singapore family. The simple ingredients are not complicated, but it has the potential to stir and stir slowly and patiently. And I like the slightly grainy taste, it tastes more layered! After cooling, it can be stored in the refrigerator for two weeks and consumed slowly! Remember not to get water!
