Here’s a fried chicken wings recipe you must try, the uniquely delicious and crispy salted egg fried chicken wings 咸蛋鸡. Also known as ayam goreng telur asin (or telur masin), the crispy fried chicken is coated with a spicy salted duck egg yolk sauce that gives it a distinct taste that is both savoury and creamy at the same time. This easy to follow recipe will show you how to make salted egg chicken wings at home using a different method of preparing the salted egg yolk i.e. by boiling it instead of steaming, which makes it less messy to separate the yolk from the white while the cooked whites can easily be eaten with congee or other dishes without wasting. The full recipe is below

800g chicken wing pieces
Vegetable oil

Coating:
½ cup corn starch
¼ tsp salt
¼ tsp black pepper
¼ tsp garlic powder

Sauce:
3 salted duck eggs
5 cloves garlic, chopped roughly
2 birdseye chilli, sliced thinly
40 curry leaves
⅓ tsp salt
½ tsp sugar
¼ tsp white pepper

Cook salted duck eggs by placing in boiling water for 8 mins.
Allow to cool for 5 mins then remove the yolk.
Mash the yolk into fine pieces and set aside to use later.

In a bowl, mix coating ingredients until well combined.
Coat each piece of chicken wing.
Allow to rest for 5 mins before frying.
Fry in vegetable oil on medium heat for around 12 mins until golden brown turning every 2-3 mins.
Drain well and set aside.

In a clean wok, fry garlic, chilli, and curry leaves in vegetable oil on medium heat for 1-2 mins.
Add salt, sugar, and white pepper and stir through to combine.
Add salted duck egg yolks prepared earlier and stir immediately.
Stir vigorously and continuously until the yolks begin to dissolve in the oil and froth (add more oil if too dry).
Add fried chicken prepared earlier and briefly mix through to combine.
Serve immediately.
