Easy Holiday French Onion Mashed Potatoes is what I will be sharing with you today. This mashed potato recipe combines creamy Yukon gold potatoes and sweet caramelized onion. This will be a hit at any Holiday table. Here is what you will need:
Ingredients:
5-6 Yukon Gold Potatoes peeled and chopped
1 extra large sweet onion thinly sliced
salt
1/2 cup warm soy milk
1/2 cup warm veggie broth.
1/2 to 1 cup plant based cheese sauce here is a link to the one I used:
   • VEGAN SHEET PAN NACHOS /WFPB/ OIL FREE   (recipe is in the description box of this video)

Instructions:
place potatoes in a pot of cold water and bring to a boil and simmer until fork tender.
While potatoes are cooking add a bit of veggie broth to a good non-stick pan and turn heat to medium. Add onions and let cook down, for 3 minutes, stirring as needed and adding more broth if needed. Add a couple pinches of salt and continue to cook down for10 to 30 minutes depending how how caramelized you want your onions. I cooked mine for 30 minutes.
When potatoes are done drain and put back into the same pot. Using the beaters on your mixer mash down the big chunks of potatoes and add soy milk. Mix for a minute and the add veggie broth and then mix till smooth, do not over mix or potatoes will become like glue. Then add in 1/2 of the onions and the cheese sauce and fold in gently to get the onions incorporated through out the potatoes. Taste and add salt and or more cheese sauce if needed. Finish by adding the rest of the onions to the top and give then a swirl with a fork so they are all over the top.
