Cinco De Mayo is only a few days away. If you celebrate, here is an amazing side dish for you to try. We have several dishes to come but this one was so delicious I couldn't wait to share it so I had to put it out first. It is so simple and delicious. It can easily be cut in half if you don't need the amount the recipe makes. I hope you will try it and let us know what you think.

Ingredients:
1 lime, juiced
2 cups rice, uncooked
3-4 Tbsp olive oil
1 medium onion divided, rough chopped
4 tomatoes, quartered
2-3 garlic cloves, or 3 tsp minced garlic
1 tsp tomato bouillon
2 tsp chicken bouillon
4 cups water
2 jalapeno, ribs and seeds removed
1 tsp Mexican chili seasoning

Drizzle oil in hot pan, add rice and stir around until toasted. Meanwhile, in the blender, add tomatoes, garlic, 1/4 chopped onion, water, and lime juice. To the rice, add jalapenos and remaining onion and stir together. Add blender ingredients to the toasted rice. Stir in tomato bouillon, chicken bouillon, and Mexican chili seasoning. Cover and let cook on low heat 15-18 minutes, until rice is done.
