EASY Chili Verde | Instant Pot Recipe

A fantastic recipe for white bean chili with the delicious addition of salsa verde. So quick and easy in the Instant Pot. Hope you enjoy!

RECIPE:
It may not be truly authentic, but we love it!

White Bean Chili Verde
2 cups dried beans (I used cranberry) or white beans of choice
1 medium onion, chopped
3 cloves of garlic, minced or pressed
1 jar salsa verde (I use La Victoria)
1 small can Ortega chopped mild chili.
1 green bell pepper, chopped
Jalapeno chili (optional)
Salt & Pepper to taste
3-4 cups of water or more

Sort beans. Rinse and drain.

Saute onions and garlic until softened.

Add dried beans, salsa verde, Ortega chopped chili, bell pepper., and salt and pepper. Jalapeno, if being used.

Add enough water so it is approximately 2” above bean level.

Cover pot with lid. Keep in “Sealing” mode

Turn IP on “Manual” and set timer for approximately 40-45 minutes (mine took 40-41 minutes)

Natural release pressure from Instant pot.

Remove lid. Stir. Enjoy!
