Appam is a variant of dosa recipes. It is very famous in kerala side. They used to prepare every day or alternate days. It is a healthy break fast when it combines with vegetable stew orcoconut milk or kadala curry or egg kurma or chicken gravy. Fermentation takes place in this process, it makes the probiotic bacteria in the batter. It is good for health and heals the intestine problems. Now we go for the process of making appam and vegetable stew in tamil.

Making of appam :

Take a bowl of rice and soak it upto 30 mins. now clean the rice and add cooked rice or earlier day rice( this is for smoothness). Add some grated coconut, salt and sugar as show in the video. add some water into it and grind it nicely. Keep it upto 8 hours with the lid closed. Now stir the batter with a pinch of soda salt/baking soda(sodium bicarbonate). Now the batter is ready for making appam. Heat a dosa pan or appam pan, pour a batter nicely spread the batter cook with lid closed and take it after 3-5 mins.

Making of Vegetable stew /veg stew
Now heat a pan add some coconut oil, add mustard seeds, if it pops add onion and fry for 2 minutes, Now add finely chopped ginger, curry leaves and green chillies. Stir fry upto 2-3 minutes. Then add ginger paste into it and saute it until its smell goes off. Add a vegetables in the mix. Add some water and salt into it. Close the lid and cook it for 5 minutes. Now add coconut milk after few minutes add pepper powder, then cook it for 2-3 minutes. Add coriander leaves and turn off the stove. Now its ready to serve.
